but then there really is someone who is committed to making these delights! I

Rereading my post on cans of tuna I had the doubt of not being successful, despite having every intention to convey the whole load of memories and feelings that I wanted. With this post I returns this opportunity to tell you about a fishing means to me ... fun ... fun summer .... The blue fishing (mackerel, sardinella, anchovies), until a few years ago the greater activities of Lampedusa, is practiced from May to November with the system to seine a rectangular network which gives its name to the boat also used. The vessels (Purse candy station jars seine) candy station jars who practice it are long 14 \ 15 meters and have a crew of at least 15 people. The fishing is done at night, but during the nights of the full moon this fishery can not be practiced, its light would disturb the action of the lampara fact, the true protagonist of this fishery, which attracts the fish in a single point in the sea. Around this point the network is lowered; This traps the fish that has collected around candy station jars the lampara and is picked up on the vessel. I read with pleasure that the same fishing is also practiced in Civitacchia, Fabrizio's Studio candy station jars in the center spoke with a few poem Giono ago. Today fishing is no longer candy station jars a blue fishing so rich and practiced. But in my memories of the little girl has a magic party. Often after a night of hard working fishermen candy station jars returned to port with boats so full that it seemed they were about to sink. In their tired faces and sleep is marked by reading the satisfaction and pride of so many fisheries. It was not uncommon for tourists who came to watch their return regalassero whole fish boxes. And those lucky days at ten in the morning, in the streets, you could already feel the smell of grilling. It was a feast for all; lots of fish meant a lot of work. The fish was in fact (and it is but in lesser quantity) candy station jars purchased, for the most part by the canneries where many women worked. E 'for this reason that there is no good housewife candy station jars at Lampedusa who do not know how to cook, work, and keep the tuna in olive oil 60 g salt per liter of water, extra virgin olive oil (quality) Decapitate mackerel, Lampedusa ... you do using only your hands .., taking away the entrails of the fish. Measure the water and putting it in the pot and add salt using the amount of salt indicated. When the water boils immerse mackerel and boil for an hour from when the water resumes boiling. After this time, drain them and put them to cool on the grid after being gone for a few seconds under cold water at this point is the most difficult part. You have to divide it into two mackerel, scrape the skin and remove both the central spine that those belly. All without breaking the threads. It is not a difficult job but quite long and requires patience. The threads must then be placed in glass jars, covered with oil, and sealed properly. Are sterilized in a water bath for an hour and a half. The sterilizing time of the cans depends on their size, this time refers to the jars of 500g, for jars larger the time increases up to 3 hours of sterilization for cans of 3 kg. They keep away from light for many months; but to consume them you have to wait at least a few weeks.
but then there really is someone who is committed to making these delights! I'm a big fan of mackerel and tuna, and a couple of years ago during a stay in calabria aunt of my friend gave me two jars worth of tuna in oil HER ... apart from the dose from the army, so good I ate it a few times ... its true that homemade is another thing and there is no comparison! It will be an hour, but I got un'acquolina in my mouth ... I love mackerel in every way, and made by hand in oil so it must be great! Brave, candy station jars really, for me, preparations are unreachable. July 17, 2007 11:58
I like this recipe. Now really are not more 'so many people who make these culinary wonders. I wondered, however, 'how come mackerel should candy station jars cook so' much in the water? It does not flake the flesh? I seem to remember candy station jars that mackerel is not so great. What else could I use to fish the tuna part that I find in full here? Thanks
